Every so often I get tired of making the same recipes week after week. We tend to eat a lot of chicken (Chicken Parmesan, Lemon Chicken, Chicken Adobo, Greek Grilled Chicken). And we have Turkey Kielbasa with Veggies quite a bit (stir-fry cut-up veggies in a couple tablespoons of oil, then add already cooked kielbasa cut into rounds; serve over rice). We also eat a lot of beef (stew, chili, tacos, stir-fry).
My husband doesn't eat pork, and fish has been so expensive lately. We also try to limit carbs, so I seldom serve pasta as a main dish. And I'm not a big veggie eater, so we don't do stuffed peppers and such.
This week's menus were:
Chili with cornbread and corn
Chicken Adobo (drumsticks marinated in vinegar and soy sauce) over rice, with green salad
Turkey breast with mashed potatoes, green beans, salad; apple cake for desert
Spaghetti with meat sauce, corn, salad
Leftovers
Inspiring, I know! Actually, the apple cake was quite good. I got the recipe from one of my favorite magazines, Cooking Light. And the Chicken Adobo is a new favorite of ours and super easy to put together (cheap, too!).
We need to branch out a little and vary our diet...any suggestions?
